Valentine’s M&M Cookies

Chocolate, champagne, hampers… edible gifts are pretty much foolproof, especially when it comes to one of the sweetest days of the year: Valentine’s Day! You might think that you need to go all out and spend a fortune on your partner this year, however, a gift that comes from the heart doesn’t have to break the budget. 

Guaranteed to set hearts, and taste buds, racing this February 14th are these simple yet delicious Valentine’s M&M cookies. Discover your creative side and integrate pink, red, and white M&M’s into a yummy basic cookie mix for maximum impact.

Ingredients:

  • 1/2 cup unsalted butter (1 stick) softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1 cup all-purpose flour (I like to use organic plain white flour)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 1/3 cups Valentine’s M&M’s

Instructions:

  1. Preheat oven to 175°C. Line a baking sheet with parchment paper and set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, brown sugar, peanut butter, egg, and vanilla together until fluffy.
  3. Slowly add the dry ingredients to the wet mixture, beating until well blended.
  4. Fold in the one-cup M&Ms, reserving the left for decoration when they come out of the oven.
  5. Drop a tablespoon of dough onto the prepared baking sheet. Bake 12 minutes until lightly browned.
  6. Immediately after removing from the oven, carefully press 2-3 pieces of M&M’s candies to the top of the cookies.
  7. Place the cookies onto a wire rack to cool completely.
