Over a medium high heat get your griddle pan warmed up.
Prepare the tuna by rubbing the outside of the steaks with 1 teaspoon of oil and season with salt and pepper
Gently place the tuna steaks onto the griddle and sear for 1-2 minutes on each side making sure to leave it pink in the middle.
Put the tuna to one side to rest.
Create the dressing by combining the zest and juice of half a lemon with the remaining olive oil and throw in your finely chopped gherkins. Don’t forget to season to taste!
Place a generous handful of salad leaves on a plate, top with the cucumber and the remaining chunky gherkin slices.
To serve slice the rested tuna into strips and arrange on top of the salad leaves, finishing off with a drizzle of the dressing and a lemon wedge on the side.
