Recipe: Quorn Red Thai Chicken Curry #ahealthyprotein
I love using Quorn as a protein source in my vegetarian meals and today I wanted to share with you a recipe which I picked up at the Quorn Cookery Class which I attended recently.
Quorn Red Thai Chicken Curry
Ingredients – Serves 4
2 teaspoons Mustard Seeds
2 cloves Garlic
1 teaspoon Fenugreek Seeds
3 Chillies
1 teaspoon Coriander Seeds
2 Thumb Size pieces of Root Ginger
1 teaspoon Cumin Seeds
1 teaspoon Chilli Powder
2 teaspoons Turmeric
1.5lb Quorn Chicken Pieces
2 Cardamom Pods
3 Tins chopped Organic Tomatoes
3 Onions
1 Tin Of Coconut milk
- Dry fry all the seeds and pods until toasted to unlock the flavours
- Place in a pestle together, and grind up the seeds and pods until a powder is formed, set aside.
- Lightly fry the Quorn Pieces in a frying pan, then set aside.
- Fry the onions in a pan, when golden in colour add the ginger, garlic, and chillies.
- Add the curry powder, the Quorn Chicken Pieces, and the tomatoes.
- Cook for 1/2 hour on hob, or in the oven at 200oC/320oF/Gas.
- Add the coconut milk during the last ten minutes in order to achieve your desired consistency and flavour.
- Serve with your choice of rice & garnishes for the perfect filling meal.
