Recipe: Lazy Vegan Nachos

Next year my boyfriend, who is currently vegetarian, aims to go Vegan for Veganuary and to help him adapt we’ve decided that every weekend we will make an amazing Vegan dish to try.

Today I am going to tell you about a super easy one which takes hardly any time at all! We were inspired by the Bosh! recipe for big bad chilli nachos but we were too lazy to make their amazing Ultimate Chilli as we were making another dish – recipe to follow!

Ingredients:

  • 2 x 200g bags tortilla chips
  • 1 x 200g jar jalapeño chillies
  • 50g dairy-free cheese
  • 1 x portion Guacamole (shop-bought or homemade!)
  • 1 x portion Salsa (shop-bought or homemade!)
  • Handful fresh coriander leaves (I got mine from my garden)

Method:

  1. Pour the tortilla chips into an ovenproof dish so that they cover the bottom.
  2. Slice the jalapeños and scatter them on top of the nachos.
  3. Sprinkle over the dairy-free cheese.
  4. Put the dish in the oven and bake until the tortilla chips have started to brown about 10–15 minutes.
  5. Take the dish out of the oven
  6. Splodge random spots of guacamole and salsa over the top.
  7. Chop up the coriander leaves and scatter them over the nachos.
  8. Enjoy on their own of as part of a Mexican feast!
