Recipe: Baked Pumpkin French Toast

Everyone goes mad for pumpkin in Autumn, but you can use this delicious, comforting ingredient all year round to make really tasty treats, both sweet and savoury.

Today I am going to show you how to make this moreish baked pumpkin french toast which makes for the perfect lazy Sunday brunch (or any day of the week treat, to be honest!)

French Toast can have almost limitless personalised recipes, and this version is in no way a recipe for people on a diet, it features heavy cream and sugar – but everyone is allowed something a little naughty from time to time right?

The good news is that it is super quick to make; slice some bread, mix the other ingredients together, pour over the bread and then bake for 25-30 minutes. If you really want to push the boat out any not make a cinnamon sugar to go on top, or even melt some chocolate to drizzle across? YUM!

Ingredients:

  • 1 french baguette
  • 3 eggs
  • 1 cup of milk
  • ¼ cup of heavy cream
  • ½ cup of pumpkin puree
  • ½ cup of granulated sugar
  • ½ tsp of pumpkin pie spice

Directions:

  1. Preheat the oven to 350 degrees.
  2. Cut bread into one inch slices, then cut each slice in half. Arrange in the bottom of a  12” cast iron skillet.
  3. Add all of the other ingredients to a large bowl and whisk until the eggs are fully beaten, and you have a liquid mixture.
  4. Pour mixture over bread.
  5. Put the skillet on the middle rack in the oven and bake for 25-30 minutes, or until the top is golden brown.
  6. Remove from the oven, and sprinkle powdered sugar over the top, if desired, and serve warm with syrup.
