#UseYourLoaf with Bake Off queen Nancy

I was shocked when I discovered that figures have recently revealed that 24 million slices of bread are thrown away in the UK every day – 20% of Brits binning a loaf without even opening it!

I like to think that I am pretty thrifty when it comes to cooking, and like to get the most out of any produce I buy especially when my food budget can only stretch so far!

As part of a campaign to highlight this wastage, Great British Bake Off champion Nancy Birtwhistle joined forces with national charity Love Food Hate Waste to create a menu with one requirement – each course had to contain bread which had gone stale to be served ay a pop-up restaurant in London’s Borough Market.

So, what was on the menu? For a starter Nancy served up a niçoise salad with black olive croutons, a Greek classic – moussaka with a breadcrumb topping for main course and a British favourite, a summer pudding terrine.

Nancy said: “There’s an assumption with people, my family included, that stale bread means ‘gone off’ bread, fit for the bin.”

I don’t often buy bread these days as my husband can’t eat grains, however, when I do, I will certainly think twice before throwing out that last slice!
