Recipe: Picnic ready Cheesy Croquettes
As a vegetarian I depend upon diary for protein and never miss a chance to try something new when it comes to one of my favourites: cheese! Check out this picnic or summer party recipe for tasty cheesy croquettes from Stefan Gates for Castello Cheese.
Ingredients (makes about 20)
300g of plain flour
350g grated Castello’s Tickler Extra Mature Cheddar
110g of dry white bread-crumbs
140g of room temperature butter
4 eggs (preferably free range) separated into yolks and whites
Salt and black pepper
Vegetable oil
Chilli salsa – for an accompaniment
Method
- Preheat oven to 180C (fan)
- Rub the butter into the plain flour
- Combine the egg yolks with the plain flour mix and season
- Add the grated cheddar, breadcrumbs and 3 tablespoons of warm water to the mix
- Work the mix into a rough dough – add more warm water if needed
- Divide the dough into small handfuls and shape into egg sized croquettes around 5cm long
- Whisk the egg whites into a foam and dip each croquette into the mix before rolling them in the breadcrumbs
- Coat a baking tray with a little vegetable oil and add the croquettes
- Bake in a 180C oven for 25 minutes or until golden brown
- Serve with chilli salsa
