Recipe: Marmalade Cookies

Nothing beats freshly made cookies on a cold winter evening, am I right? I decided to try my hand at making some delicious chocolate chip cookies from Betty Crocker with a fruity twist – Robertson’s golden shred marmalade* which I was recently given has it’s lovely new packaging inspired by the Paddington Bear movie!

Paddington Bear is a time honoured children’s classic with a main character who loves to enjoy marmalade sandwiches, in fact in the Paddington Bear stories our friendly bear ends up having a number of adventures with marmalade including attending the opening of a marmalade factory!

Robertson’s marmalade was created in 1864 and quickly became a firm favourite of the British people – so much so, that it has held a Royal Warrant since 1933. Did you know that 4 Seville oranges to into every jar of yummy Robertson’s golden shred marmalade? The word marmalade actually comes from the Portuguese word for Marmelos – a quince paste which has a similar texture to marmalade.

These cookies are really quick and easy to make and great to personalise with your own little touches such as added spices, marshmallows or in my case a fruity hit.

You will need:

  • 30ml water (2 tbsp)
  • Standard baking tray
  • Robertson’s golden shred marmalade

Don’t forget to preheat your oven to 190˚C (170˚C for fan assisted ovens) / Gas Mark 5

Method:

  • Empty the cookie mix into and bowl and stir together with the water until you have a stiff dough which can be shaped.
  • Add a tablespoon (or two, depending on taste), of marmalade to the mix and combine.
  • Spoon the dough onto a baking tray – make sure to use baking parchment to make sure the cookies don’t stick –  leave a good gap between them as the cookies spread out in the oven.
  • Bake for 10 minutes until golden – you can take them out a little early if you like a squidgy middle or leave them a little longer for a bit of extra crunch.

For an extra touch try making some marmalade icing to go on top of your yummy cookies – simply make a batch of butter-cream (butter and icing sugar) and add in some marmalade before spreading on the cookies.

The next step is the hardest of all – try not to eat them all in one go! Enjoy!
