Recipe: Quick and Easy Vegan Veggie Macaroni Salad

If someone was to ask me what my diet has been like over lockdown I will honestly answer with one word: diabolical. I know that I am not alone in turning to beige junk food to make myself feel better over the last 12 months but I know that I need to get back in control and start eating healthier once again.

With that in mind, I have been trying to find ways of incorporating more veggies back into my meals and this is a great dish to whip up when you’re feeling like you need some proper nourishment. It’s as simple as chopping up vegetables, cooking pasta and combining with a little mayo.

There really is no excuse to order take out when you have something this quick, easy and bursting full of plant power up your sleeve. Enjoy!

Ingredients:

  • ½ green bell pepper
  • ½ yellow bell pepper
  • ½ red bell pepper
  • ½ red onion
  • ½ carrot
  • 2 stalks celery
  • 1 small head of broccoli
  • ½ cup vegan mayo
  • 2 cups dry macaroni pasta
  • Salt & Pepper to taste

Method:

Prepare macaroni per package directions, drain, rinse with cold water and set aside

Small dice all veggies

Combine everything in a large bowl and mix until well combined

Serve and enjoy!
