Goat's Cheese and Caramelised Onion Tart

I have to admit that more often than not I am a lazy cook. I like making things which are quick and easy to make with few processes and hopefully a short preparation and cooking time. I am always on the look out for ingredients which come ready made or ready chopped (lazy I know!), so when I spotted this recipe for goat’s cheese and caramelised onion tart I couldn’t believe how simple it is to make and how delicious the end result is! Why not try it for yourself?

Method:

  1. Preheat the oven to 200C/180C fan/gas 6.
  2. Melt the butter in a large frying pan on a medium heat and once melted add the olive oil, continue to heat until it starts sizzling.
  3. Add the sliced pickled onions, stirring to coat, then sprinkle in the sugar and mix with the addition of 50ml cold water. Simmer for 6-7 minutes to allow the sauce to become thick and shiny before adding half the thyme leaves, season with salt and pepper and set to the site.
  4. Grease a flat baking tray with some butter and lay your puff pasty sheet on top. Create a 1 inch border around the pasty using a sharp knife – be careful not to cut through it – and brush the pastry with the beaten egg.
  5. Spoon out the onion mixture and spread on the pastry sheet making sure to keep within the border. Crumble the goat’s cheese over the top and sprinkle on the remaining thyme leaves.
  6. Season with pepper and salt before baking for 15-20 minutes until the pastry is golden and the cheese is lightly browned.
  7. Serve whilst still warm garnished with thyme sprigs, and side salad. Enjoy!
