Recipe: Brie and beetroot ciabatta slices

I love to try new recipes to create delicious and quick vegetarian friendly food. My husband has really pushed me to try different pickles (a staple in Moldova where he’s from), so when I spotted these ciabatta slices made with a fabulous combination of creamy, rich bree and tangy, earthy pickled beetroot I was really excited to try it. Why not give it a go yourself?

Ingredients

  • Ciabatta bread sliced into 8
  • 1/2 a peeled clove of garlic
  • 4 tablespoon of extra virgin olive oil
  • 400g of drained Haywards Sweet & Mild Sliced Beetroot
  • 350g of sliced brie
  • 100g of roughly chopped pitted black
  • 1 tablespoon of fresh flat leaf parsley for serving
  • Black pepper

Method

  1. Preheat your frill and lightly toast one side of your slices of ciabatta
  2. Rub the non toasted side of your ciabatta with the peeled garlic, then brush the ciabatta with half of the olive oil. Season the slices with pepper to taste.
  3. Cut your beetroot slices into chunks and place them on the non toasted slide of the ciabatta, top with your slices of creamy brie.
  4. Grill your slices for 2-3 minutes until the brie bubbles.
  5. Sprinkle over olives and parsley and serve!
