Recipe: BBQ Mushroom Cheese Burger

I have to admit that when it comes to vegetarian-friendly BBQ food I usually jump straight to a Quorn product or two, so when I came across this tasty alternative which uses portabello mushrooms instead of veggie burgers with a hit of sweet and tangy caramelised red onion relish which will get your mouth watering! Check it out for yourself:

Ingredients

  • 1 x peeled portobello mushroom
  • Olive oil
  • A large handful of washed baby spinach, wilted
  • 1 teaspoon of grated parmesan cheese
  • 1 teaspoon of cream cheese
  • A pinch of nutmeg
  • 1 large English Muffin
  • 1 slice of gorgonzola cheese (or cheddar if you prefer)
  • 2 washed and dried baby gem lettuce leaves
  • 1 slice of Beef Tomato
  • Caramelised red onion relish (I used Branston)
  • Salt and pepper

Method

  1. First things first, make sure the BBQ is up and running at a decent temperature (or pre-heat your oven to 180C).
  2. Drizzle the mushroom with your olive oil, sprinkle with salt and pepper before grilling on the BBQ (or oven) for 15 minutes, until cooked.
  3. Mix the wilted spinach, parmesan, cream cheese, nutmeg together adding salt and pepper to taste.
  4. Cut the English Muffin in half and prick with a fork, spoon the creamed spinach mix onto one-half and add the cooked mushroom (bottom side up), putting the slice of cheese finally on top.
  5.  Place both halves of the muffin back onto the BBQ (or in the oven) for another 5 mins or so until the cheese has melted and the other half has toasted.
  6. Add the lettuce leaves and tomato on top of the mushroom/cheese and as a final flourish add a generous helping of caramelised red onion relish to the toasted half and put on top.
  7. Enjoy!
